Homemake Shake Shack Burger

Food and Cooking | Posted by benwong
Feb 05 2010

We are talking about the Shack Burger from Shake Shack, it is one of the best testing burger period.  I accidental bump into this recipe on-line and look like the author has done extensive research to mimic the taste and feel of the frame burger at home.  It is a lot of works but it still beat the hack of flying to NY and stand in line for hour to get one.

The Burger

- makes 4 burgers -

Ingredients

8 ounces beef sirloin, trimmed of gristle, and cut into 1-inch cubes
4 ounces well-marbled beef chuck, trimmed of gristle, and cut into 1-inch cubes
4 ounces well-marbled beef brisket, fat cap intact, trimmed of gristle, and cut into 1-inch cubes
2 tablespoons butter, melted
4 Martin’s Sandwich Rolls
4 tablespoons Shack Sauce (recipe follows)
4 leaves of green-leaf lettuce, clipped
8 center-cut slices ripe plum tomatoes
1/2 teaspoon vegetable oil
Kosher salt and fresh-ground black pepper
4 slices yellow American cheese

Procedure

1. Place feed shaft, blade, and 1/4-inch die of meat grinder in freezer until well-chilled. Meanwhile, place meat chunks on rimmed baking sheet, leaving space between each piece and place in freezer for 10 minutes until meat is firm, but not frozen.

2. Combine meat in large bowl and toss to combine. Pass meat through grinder twice. Form into four disks, about 2-inches tall, and 2.5-inches wide. Refrigerate until ready for use.

3. Open buns but do not split hinge. Brush lightly with butter, then place under broiler or in toaster oven until golden brown, about 1 minute. Spread 1 tablespoon Shack Sauce on top half of each bun (for true authenticity, squirt out of squeeze bottle into three lines, three passes on each line). Place 1 leaf lettuce and 2 slices tomato on top half of each bun.

4. Using wadded-up paper towel, rub inside of heavy-bottomed 12-inch skillet with vegetable oil, then place over medium-high heat until just beginning to smoke. Season beef pucks on top side with salt and pepper, then place, seasoned side down, in skillet. Using back of heavy, flat spatula, press down on beef pucks firmly to form 4-inch round patties, being careful not to let it stick to bottom of spatula. Season top side with salt and pepper. Cook until crisp brown crust has formed, about 2-minutes.

5. Carefully scrape patties from skillet, and flip. Top each patty with 1 slice American cheese. Cook until cheese is melted, about 1 minute longer. Transfer patties to burger bun bottoms, close sandwiches, and serve.

Shack Sauce

- makes about 3/4 cup sauce -

Ingredients

1/2 cup mayonnaise
1 tablespoon ketchup
1 tablespoon yellow mustard
4 slices kosher dill pickle
1/4 teaspoon garlic powder
1/4 teaspoon paprika
pinch cayenne pepper

Ingredients

Combine all ingredients in blender until smooth, scraping down sides of blender with rubber spatula as necessary.

Another Off Beat Anime: Seitokai no Ichizon

Feb 02 2010

Seitokai no Ichizon (ç”ŸćŸ’äŒšăźäž€ć˜ï»ż) is another of those hidden gems which will never make it  out of Japan for sure.  It may look like another moe or romance comedy series, but it is not so.

The series, which is also called Hekiyƍ Gakuen Seito-kaigi Jiroku (The Records of the Hekiyƍ Academy Student Council’s Activities), revolves around a private high school whose student council is chosen entirely by popularity vote. As a result the members are usually a group of pretty girls. The sole male member is Ken Sugisaki, who entered the student council by becoming the top-scoring student in the level. Because of this, Ken Sugisaki is the only male representative, in the otherwise all bishƍjo student council.

The series revolves around the meetings inside the student council room . The story (as written in the series) has a metafiction component where, under the student council president Sakurano Kurimu orders, vice president Ken Sugisaki has to write stories to show the other students how brilliant the student council is. Ken negotiates with Fujimi Shobo to publish these stories.

Like Lucky Star, the series portrays the characters having comical conversations and parodying anime culture.

ANIME To Save The Economy

Anime | Posted by benwong
Jan 26 2010

Lucky Star’s Impact on Shrine’s Town   =  $11 million USD.

70 million yen spent on Lucky Star anime goods alone at Washimiya

The town of Washimiya estimates that the Lucky Star anime has brought over one billion yen (about US$11 million) into the local economy after the town’s main shrine was featured in the anime in 2007. While the full economic impact of Lucky Star cannot be determined for certain, sales of related goods alone have been pegged at 70 million yen (US$780,000). Visitors during the traditional three-day New Year’s holidays increased from 90,000 in 2007 to 450,000 this year. At over 500 hits a day, the town’s commerce and industry associations says it has the most popular website of any such association in the country.

Lucky Star fans began making “holy pilgrimages” to the town’s main shrine after the anime featured Kagami and Tsukasa Hiiragi — twin sister characters who supposedly work at the shrine as miko (shrine maidens). Manga creator Kagami Yoshimizu had lived just one city to the east of Washimiya when he began drawing the original Lucky Star manga. (The town is named Washimiya, but the shrine is called Washinomiya.)

Three months after the anime aired, Yoshimizu and the anime voice cast led by Emiri Katou (Kagami) came to Washimiya in December of 2007 for an “official shrine visit.” 100 people had arrived by 5:00 a.m. that morning, and 3,500 eventually came. 2,100 mobile phone straps offered by the local Ootorichaya Washinomiya restaurant sold out within half an hour. The following month, 300,000 visitors came during the first three days of 2008, and 420,000 came during the same period in 2009.

Google Is The New Big Brother?

Gadgets and Technology | Posted by benwong
Jan 26 2010

Google is the real Big Brother from the book “1984″? According to Benjamin Edelman, who says that Google’s Toolbar will continue to  tracks your every browsing move when you’ve authorized it or NOT.  The page is a bit technical for most layman but in summery, when enhanced features are enabled in the Google Toolbar, the URL for all websites visited are sent to Google. In return, Google adds some additional information, such as “PageRank”, “Related Sites”, and “Sidewiki” to the Toolbar. That’s to be expected.  The Problem come in to place when you disable this feature, URLs are still sent to Google for processing.

Turning off the Toolbar’s enhanced features is an option, but Edelman says that Google designed the Toolbar like the “Hotel California”. Edelman writes, “disabling Enhanced Features seems to require uninstalling Google Toolbar altogether, and in any event disabling Enhanced Features certainly lacks any comparably-quick command.”

Benchmark Of The New AMD CPU Line Up

Extreme Tech just publish the benchmark result for the new AMD CPU line up: ï»żPhenom II X2 55 Black Edition, Athlon II X4 635, Athlon II x3 435, Athlon II X2 255 and Phenom II X4 910e. I agree with their assessment that AMD will have a hard road ahead of them.  Intel has around a $50 price advantage over AMD CPU line up because of Clarkdale build in GPU. This will steer a lot of OEM and system builder to offer the Intel solution over the AMD for their low-midrange price system.

Darker than Black: RyĆ«sei no Gemini – One BAD Anime

Anime | Posted by benwong
Jan 23 2010

Not BAD as good but real real BAD. This got to be one of the worst anime in years, the animation itself  not too bad but the story is just horrible.

It can easily be make into a 2 hrs OVA instead of a 12 ep TV series.  Only the first and last 2 ep contribute something to the plot the rest of the 8 ep are all filler.  They put together a stupid ending so they can continue to milk the money off it.  How bad is the ending? It is like the first 95% of the story  is the 3 little pigs but at the very end they plug in a Snow White ending.

Stay away for this series.

Now Watching Anime: Tentai Senshi Sr. 2 and FairyTail

Anime, My Life | Posted by benwong
Jan 22 2010

Got hook onto Tentai Senshi (ć€©äœ“æˆŠćŁ«), now onto season 2. It is a VERY VERY funny anime if you can understand Japanese, kind of like a Japanese version of South Park. The story revolves around battles  between the evil organisation Florsheim and the ally of justice Sun Red. The twist is that Sun Red is a rough-talking, violent and rude hero while the villains of Florsheim (led by General Vampu) are for the most part polite, conscientious and easy-going. Each episode is divided into various shorts of varying length. Most of the humour comes from the interactions of the characters, especially the main trio of Sun Red, his girlfriend Kayoko and General Vampu.

Also start watching anime Fairy Tial. A typical  adventure but with  good production value.  The plot is a bit generic but with enough humor build in to make it interesting to watch. Aya  Hirano (ćčłé‡Ž 綟) is the seiyu for Lucy This is one of the main reason I am watching this …:-)

Hire a human ‘bed-warmer’

Interesting Facts | Posted by benwong

Holiday Inn is offering a trial human bed-warming service at three hotels in Britain this month. If requested, a willing staff-member at two of the chain’s London hotels and one in the northern English city of Manchester will dress in an all-in-one fleece sleeper suit before slipping between the sheets. The bed-warmer is equipped with a thermometer to measure the bed’s required temperature of 20 degrees Celsius (68 Fahrenheit).

Won’t a  electric blanket do the trick? It is bad enough with hotel, not sure I want some unknown stranger sleep in my bed…. unless is one of the maid from a Japan Maid Cafe…. :-)

South Korea plans to adopt digital textbooks next year

ebooks | Posted by benwong
Jan 18 2010

Look like South Korea take a lead in adopting ebook in school.

Elementary, middle and high school students will be learning with electronic textbooks in addition to currently used paper textbooks starting next year, the Education Ministry said yesterday.

The announcement came as the ministry continues to promote the idea of giving more freedom to textbook publishers to set prices and for schools to decide what textbooks and learning material formats for use in the classroom. Price setting will be made flexible from 2012, according to the ministry.

The ministry’s decision will pave the way for ordinary books on the market and some books written by schoolteachers to be officially adopted as textbooks only if the ministry or local education offices approve. Since that means some textbooks could be even thicker and heavier than conventional textbooks that are normally no thinner than 300 pages, the Education Ministry began thinking about using e-textbooks on CD-ROMs.

How To Speed Up A Netbook

Computer How-Tos | Posted by benwong
Jan 15 2010

I got 1-2 email a week now from friend and family asking why the new cool netbook they get during last xmas is not hot on performance. The truth is netbook is design as a ultra-portable computing device and is not supposed to be your main computer environment. There are really nothing much you can do to bring its performance to match a low end notebook.  But not all hopes are lost, there are some tweak you can do to make it a better experience.

Add More Memory

In terms of bang for your buck, a memory upgrade is almost always your best option. For around $50 USD you can get a 2GB stick of DDR2 RAM , which will usually mean a very noticeable increase in speed. Please don’t over do it and keep it at 2GB total memory. First most netbook can’t support more then 2GB of memory due to hardware restriction. Secondary, even if you netbook can support it, once you pass the 2GB range the bang for the buck ratio start to diminish.

New Hard Disk

You have 2 choices here. First If you’re looking for faster startup and program launching, you may want to consider upgrading your netbook’s HDD to an SDD. A 64GB SDDs are available for around $150, and should be plenty of storage for your OS, apps, and a smattering of media. If you only plan to use your netbook mainly for web-browsing and word processing, you can get by with a 32GB SSD, which run around $100. If your system comes with Win7 than you will need to do some research and look for SSD which support the “Trim” command like the second-generation Intel X-25 80GB SSD. You may need to pay a bit more for the drive but the performance gain will be worth it. Don’t waste the money if you are still using XP or Vista.

Another option is to upgrade the HDD to 7200 RPM, you will lost some batter life but the system should runs a bit faster. Buy the smallest size HDD you feel comfortable with, larger storage size usually mean slower performance.

Reinstall the OS and/or Remove all the bloatware

If your system comes with a installable CD (not a emergency CD)  than it is always better to reinstall the O/S. Keep the install as clean and as minimum as possible-  only install the MUST have components and turn off (or uninstall) any system services which you don’t need.  I understand this is not doable for most people, so the 2nd best thing you can do is uninstall all the bloatware from the machine. Bloatware is software that is useless or  near-useless, which companies pay system-builders to include on their machines. It can include media players, toolbars, and trial subscriptions to online services. In reality, all they do is slow down your machine.

PC Decrapifier is one of the best free software, it  maintains a list of crapware commonly installed on OEM machines, and uninstalls them for you. The process is very simple, just use the internet or a USB thumb drive to get the executable onto the laptop, then give it a run. When you’re asked, indicate that you’re running PC Decrapifier on a new computer. The program will perform a quick scan, then return a list of programs that it identifies as junk.

Unfortunately, as good as PC Decrapifier is  there are still programs it can’t uninstall.  You will need to use Revo Uninstaller to take care of those very stubbon bloatware like Google Desktop. Yes although Google Desktop is a nice tools on your desktop of nettop it is a nuisance on a netbook.

Don’t Use Firefox

What, no firefox? Yep, stay with Internet Explorer for now.  Firefox has a few know issues which will make it eat up too much system resources on a netbook. Until they get fix you will have a better experience using Internet Explorer.

Adjust Power Option

You have a choice here if your system comes with Vista or Win7. You can give your netbook a bit more power in return for a shorter battery life.

  • In Control Panel, go to “Power Options” under “Hardware and Sound”.
  • Click change “power-saving setting”.
  • Click “change plan setting” on the right for the current selected “Preferred plans”.
  • Click “Change Advance power settings”
  • Expand “Processor power management” by clicking on the “+” sign next to it.
  • Expand the “Minimum processor state” by clicking on the “+” sign.
  • Change the setting to 100%.

Turn Off Aero

Although most netbook have the power to drive Aero but all those fancy effect does take up processor power. Turning Aroi off will lighten the load of your system. Just right click on your desktop, then click Personalize. Scroll down in the personalization menu, and select Windows 7 Basic or Windows Classic as your theme.

On top of it,  all of the so call 3D TVs require special and some what expensive glasses, only a few 3D-capable sets actually come bundled with them.

Offbeat Way To Protect Valuables from Airline Theft or Loss

Interesting Facts, It must be true | Posted by benwong
Jan 14 2010

Have you ever want to check in your laptop (or any valuables) into a check in baggage but afraid it will get stolen? Most of the time travelers are on the short-end of TSA regulations. In this instance, however, you can use travel rules to your advantage. If you’re traveling with equipment you would prefer it locked up and watched more closely than your run of the mill luggage, you can pack a starter pistol with it. TSA considers a starter pistol a firearm, and it must be checked in and secured properly.

Bruce Shneier, on his security and privacy centered blog, highlights how some creative professional photographers have been using this rule to their advantage. One of the photographers writes:

A “weapons” is defined as a rifle, shotgun, pistol, airgun, and STARTER PISTOL. Yes, starter pistols – those little guns that fire blanks at track and swim meets – are considered weapons…and do NOT have to be registered in any state in the United States.

I have a starter pistol for all my cases. All I have to do upon check-in is tell the airline ticket agent that I have a weapon to declare…I’m given a little card to sign, the card is put in the case, the case is given to a TSA official who takes my key and locks the case, and gives my key back to me.

That’s the procedure. The case is extra-tracked…TSA does not want to lose a weapons case. This reduces the chance of the case being lost to virtually zero.

It’s a great way to travel with camera gear…I’ve been doing this since Dec 2001 and have had no problems whatsoever.

You can pick up a super basic starter pistol for around $16-20 a rather small sum to ensure that your case of photograph equipment or personal effects will be watched more carefully and only opened in your presence.

Lumix DMC-FZ35

My Life | Posted by benwong
Jan 08 2010

I did not pick up the Lumix DMC-GF1 during X’mas not because it is sold out at most places but our old family camera (Sony T900) break down. The GF1 is nice but is a bit too complex and too big for my wife and kid. We need a common camera which is better then my wife point and shoot but less complex than a GF1. After some research I pick up GF1  little cousin DMC-FZ35 instead.

It is a surprisingly good camera for its price point (less than $300). It won’t replace a good DLSR but it get close to entry level DLSR picture quality. It won’t fit into your shirt pocket for sure but will easily fit in a handbag or a small bag. It sure beat the heck of carrying a full size DLSR.

  • 12.1-megapixel resolution
  • 27mm wide-angle Leica DC Vario-Elmarit lens; 18x optical zoom with POWER O.I.S.
  • HD movies with 1280 x 720-pixel resolution; AVCHD Lite format
  • 2.7-inch TFT LCD screen
  • Capture images to SD/SDHC memory cards
Pro:
  • Very good picture quality even at low light and at high ISO.
  • Relatively small size and light weight (compare to a full DLSR)
  • Excellent image stabilization.
  • Full auto mode for easy point and shoot, at the same time has enough manual setting to fit your need.
  • Very fast auto focus and almost no shutter lag.
  • Excellent video mode.
Con:
  • Non standard RAW mode file format.  It store raw file in its own RW2 format which hardly supported by any photo editing software. The driver software will convert the RW2 to tiff  format but the driver is not compatible with 64 bits O/S.
  • It did not use standard micro USB port on the camera end.
  • The color is a bit too warm in indoor full auto mode which you can’t change.

First readers with SiPix screens announced

Jan 08 2010

Looks like Jinke is moving from E-Ink to SiPix technology. They announced two new models with Sipix screens with integrated multitouch, WiFi and optional 3G.

A6 has a 6″ 16 grayscale screen with 2G of build in memory; A9 has a 9″ screen with 4G of build in memory. Both model support: fb2, ePub, pdf, doc, djvu, rtf, txt, html, ppt, bmp, jpg, png, gif, tif, mp3, Adobe DRM.

Honestly they need a better marketing department to come up with product name.

You may ask what is so different with SiPix display? Basically all the eBook device in the market now use a display technology call e-ink. In an e-ink display it use color (black) particle in a clear fluid as a display medium but in SiPix is use a white particle in a color fluid (dye). This means it will be possible to make a full color epaper type display device cheaper and does it will be backward compatible with the B&W display material.

Acer Recalls 22,000 Notebooks

Jan 08 2010

Acer Timeline owners can’t seem to catch a break. Back in October 2009, Acer recalled a whole bunch of its 13-inch models citing an overheating hazard, and once again, the exact same problem has forced Acer to issue another recall, this time for about 22,000 Timelines.

According ot the U.S. Consumer Product Safety Commission (CPSC), the problem stems from an internal microphone wire under the palm rest. Just like the last recall, the pesky wire is prone to short circuiting, overheating, and poses a potential burn hazard. There have been no reports of injuries thus far, but three reports of computers short circuiting, each of which resulted in “slight melting” of the notebook chassis.

Models affected include the Acer AS3410, AS3410T, AS3810T, AS3810TG, AS3810TZ, and AS3810TZG. The CPSC says that not all of these models suffer from the cable flaw, and that if you own one, you should contact Acer for more info.
