【材 料】 雞胸肉 九層塔 適量 胡椒鹽 適量 【調 味 料】 五香粉 1/4茶匙 糖 1大匙 醬油膏 1大匙 小蘇打 1/4茶匙 米酒 2大匙 地瓜粉 2杯 【醃 料】 蔥 2根 薑 10公克 蒜仁 40公克 水 100㏄ 【做 法】 將雞胸肉先去皮,分切成小塊狀。 將蔥、薑、蒜仁一起放入果汁機中,加入水打成汁,再用濾網將渣渣過濾掉,續加入所有的調味料,拌勻後成醃汁。 雞肉塊放入醃汁中拌勻,靜置醃漬約2小時。 將醃好的雞肉塊取出,放入地瓜粉中裏粉,讓雞肉塊均勻沾裹粉、沾緊。沾過粉的雞肉塊靜置約30秒。 熱一鍋油至180℃,以中火油炸約2分鐘,至表面金黃後起鍋,以稍微搖動漏杓的方式快速瀝乾油份. 食用時可以喜好撒上胡椒鹽即可。 … Continue reading
